The Short Order
From a ’70s-throwback Econoline van parked off Old Las Vegas Highway, Callie’s Galley, run by Louisiana native Callie Ford, dishes up a hearty mix of authentic Creole and Cajun food — an array of étouffées, bisques, and gumbos
with complex spices that work a slow, magical burn. Ford’s weekday space on Old Las Vegas Highway is a Santa Fe standby, but here’s hoping that her new weekend digs at the Flea Market at the Downs of Santa Fe will net her a wider audience.
Recommended: oyster po’ boy, crawfish étouffée, chicken-and-sausage gumbo, and crab-and-crawfish bisque.
