The Short Order
Fuego, the uncrowded, elegant restaurant within RockResorts’ La Posada de Santa Fe Resort & Spa, can be almost funereally quiet. The recent arrival of a new executive chef may signal the opportunity to impose desperately
needed consistency. Potential abounds. The recipes that grace the short menu are full of promise, but their execution varies from night to night; a not-inexpensive dinner can accordingly range from the sublime to the mediocre. On a good night the best dishes can knock your socks off. Recommended: seared
scallops on pork belly slabs, corn-chile soup with duck confit, and a duck two-ways entree. Ratings range from 0 to 4 chiles, including half chiles. This reflects the reviewer’s experience with regard to food and drink, atmosphere, service, and value.
