Fuego, the un­crowded, el­e­gant restau­rant within Rock­Re­sorts’ La Posada de Santa Fe Re­sort & Spa, can be al­most fu­ne­re­ally quiet. The re­cent ar­rival of a new ex­ec­u­tive chef may sig­nal the op­por­tu­nity to im­pose des­per­ately

needed con­sis­tency. Po­ten­tial abounds. The recipes that grace the short menu are full of prom­ise, but their ex­e­cu­tion varies from night to night; a not-in­ex­pen­sive din­ner can ac­cord­ingly range from the sub­lime to the medi­ocre. On a good night the best dishes can knock your socks off. Rec­om­mended: seared

scal­lops on pork belly slabs, corn-chile soup with duck con­fit, and a duck two-ways en­tree. Rat­ings range from 0 to 4 chiles, in­clud­ing half chiles. This re­flects the re­viewer’s ex­pe­ri­ence with re­gard to food and drink, at­mos­phere, ser­vice, and value.
