Julia, the new signature restaurant at La Posada de Santa Fe, is named for the ghost of Julia Staab, who, legend has it, has walked the halls of her former home, now a renowned hotel, since the late 1800s. Julia is an expensive place with soothing décor and a menu that’s clearly aimed at meat eaters: there are three kinds of steaks on offer, and seven of the eight other entrees involve either fish, chicken, pork, lamb, or veal. Servers are friendly, attentive, and eager to please. Recommended: wild salmon, black-and white-bombe cake.
