Ju­lia, the new sig­na­ture restau­rant at La Posada de Santa Fe, is named for the ghost of Ju­lia Staab, who, leg­end has it, has walked the halls of her former home, now a renowned ho­tel, since the late 1800s. Ju­lia is an ex­pen­sive place with sooth­ing dé­cor and a menu that’s clearly aimed at meat eaters: there are three kinds of steaks on of­fer, and seven of the eight other en­trees in­volve ei­ther fish, chicken, pork, lamb, or veal. Servers are friendly, attentive, and ea­ger to please. Rec­om­mended: wild salmon, black-and white-bombe cake.
