Fave fare: “My fa­vorite Ital­ian dish is the proudly in­au­then­tic veal parm. I grew up on it and it’s still the mean­ing of com­fort food for me.” Be­hind the scenes at Pal­izzi: Òchef Joey Baldino makes his spaghetti and crabs just like my mom does! When I ate this dish at Pal­izzi, I couldn’t be­lieve how much it tasted like my fam­ily’s ver­sion. It’s re­mark­able be­cause while Baldino and I are both South Philly na­tives of Ital­ianAmer­i­can de­scent, our fam­i­lies come from dif­fer­ent parts of Italy. Yet the fla­vors here are the same.”
