Sal­mon & Soba Hot Pot

START TO FIN­ISH: 30 MIN 8 cups veg­etable stock 6 green tea bags 3 tbsp. grated peeled fresh gin­ger 3 tbsp. white miso paste 2 tbsp. grape­seed oil 4 skin­less sal­mon or arc­tic char fil­lets (about 4 oz. each) • 2 heads baby bok choy, coarsely chopped 1 scal­lion, sliced • • 6 oz. soba noo­dles, cooked 1 cup snow peas, thinly sliced In pot, sim­mer first 5 in­gre­di­ents over medium for 10 min­utes. Dis­card tea bags. Add fish, bok choy, and scal­lion; sea­son. Cover and sim­mer un­til fish is flaky and vegeta­bles are ten­der, about 10 min­utes. Di­vide noo­dles among bowls. Top with soup and snow peas. Serves 4.
