Brown-Butter Lobster Roll

2 live lobsters

Martin’s Potato Rolls (or your favorite split-top top-loader buns) 5 tablespoon­s butter (divided

use)

Chives, chopped for garnish

Instructio­ns: In a large pot of boiling salted water, cook lobsters until they turn red, about 8 to 10 minutes. Allow lobsters to cool, then remove the meat and chop into ½-inch pieces.

Place a skillet over medium heat and add 1 tablespoon of butter. Toast the buns on both sides. Set aside.

Place the remaining 4 tablespoon­s of butter in a skillet over medium heat. Cook until the butter starts to brown and smell nutty, about 4 minutes.

Fill the toasted bun with the lobster meat and drizzle with the browned butter. Garnish with chives.
