Thank you, It’s Tops, for keeping it real and offering an authentic diner experience as the city changed around you. Opened by Dick Chapman after the Korean War and run by his kids Sheila and Bruce since 1985, It’s Tops delivered on its marquee promise of “AWESOME HOT CAKES,” stayed open until 3 a.m. and stayed the same inside even with radical changes in the neighborho­od around it, including the Central Freeway overpass, which was built and torn down during its tenure. “We’re just going to keep doing our buckwheat and our buttermilk and our burgers and our shakes and beer,” Sheila Chapman told The Chronicle’s Anna Roth in 2015, “and hold on as long as we can.” It’s Tops removed its sign in June and later confirmed its closure.
