Cy­nar Hard Candy

Line a bak­ing sheet with a lightly oiled sheet of foil or a sil­i­cone bak­ing mat and set aside. Pour 2 cups Cy­nar into a medium sau­cepan fit­ted with a candy ther­mome­ter and set over medium-high heat. Bring to a boil; cook un­til it reaches the “hard ball” stage (300°), about 6 min­utes. Im­me­di­ately re­move from heat. Care­fully pour the hot candy onto the prepared bak­ing sheet and cool com­pletely. Break into shards or pulse to a pow­der in a very dry food pro­ces­sor.
