Tomato-Basil Baked Fish

Baked fish is won­der­ful and a healthy din­ner choice. And be­cause it cooks up so quickly, I fix this easy recipe of­ten. You can make it with dif­fer­ent kinds of fish as de­sired—I usu­ally have the rest of the ingredients on hand. .

1 Tbsp. lemon juice 1 tsp. olive oil 8 oz. orange roughy, red snap­per, cod or had­dock fil­lets 1/4 tsp. dried basil 1/₈ tsp. salt 1/₈ tsp. pep­per 2 plum toma­toes, thinly sliced 2 tsp. grated Parme­san cheese

1. In a shal­low bowl, com­bine the lemon juice and oil. Add fish fil­lets; turn to coat. Place in a greased 9-in. pie plate. Sprin­kle with half of the basil, salt and pep­per. Ar­range toma­toes over top; sprin­kle with cheese and re­main­ing sea­son­ings.

2. Cover and bake at 400¡ for 10-12 min­utes or un­til fish flakes eas­ily with a fork.
