Tomato-Basil Baked Fish

Baked fish is wonderful and a healthy dinner choice. And because it cooks up so quickly, I fix this easy recipe often. You can make it with different kinds of fish as desired—I usually have the rest of the ingredients on hand. .

1 Tbsp. lemon juice 1 tsp. olive oil 8 oz. orange roughy, red snapper, cod or haddock fillets 1/4 tsp. dried basil 1/₈ tsp. salt 1/₈ tsp. pepper 2 plum tomatoes, thinly sliced 2 tsp. grated Parmesan cheese
1. In a shallow bowl, combine the lemon juice and oil. Add fish fillets; turn to coat. Place in a greased 9-in. pie plate. Sprinkle with half of the basil, salt and pepper. Arrange tomatoes over top; sprinkle with cheese and remaining seasonings.
2. Cover and bake at 400¡ for 10-12 minutes or until fish flakes easily with a fork.
