Wa­ter­melon Gaz­pa­cho

4 cups cubed wa­ter­melon, seeded, di­vided • 2 Tbsp. lime juice • 1 Tbsp. grated lime zest • 1 tsp. minced fresh gin­ger­root • 1 tsp. salt • 1 cup chopped tomato • 1/2 cup each chopped cu­cum­ber and green pep­per • 1/4 cup minced fresh cilantro • 2 Tbsp. chopped green onion • 1 Tbsp. finely chopped seeded jalapeno pep­per • Puree 3 cups of wa­ter­melon. In a bowl, com­bine the puree and all re­main­ing ingredients. Chill un­til serv­ing. Serves 4.
