Q: What inspired you to create this light yet hearty salad?
A Living in the Garden State of New Jersey, I’m lucky to have access to all the beautiful goodies in the dish. I pick up the eggplant, arugula, tomatoes and basil at my local farmers market.
What summer ingredients can you just not get enough of ?
I’m from Hammonton, known as the Blueberry Capital of the World, so of course I love blueberries. In fact, my first job as a kid was on a blueberry farm. And I swear by Jersey tomatoes—they make the best pasta sauce!
