Q: What in­spired you to cre­ate this light yet hearty salad?

A Liv­ing in the Garden State of New Jersey, I’m lucky to have ac­cess to all the beau­ti­ful good­ies in the dish. I pick up the egg­plant, arugula, toma­toes and basil at my lo­cal farm­ers mar­ket.

What sum­mer ingredients can you just not get enough of ?

I’m from Ham­mon­ton, known as the Blue­berry Cap­i­tal of the World, so of course I love blue­ber­ries. In fact, my first job as a kid was on a blue­berry farm. And I swear by Jersey toma­toes—they make the best pasta sauce!
