Southwest Turkey Patties with Beans
These turkey patties are delicious and low in calories. Skip the rice if you’re looking to cut carbs. —Dot Carpenter, Washington, PA

1/₃ cup shredded carrots 1/₃ cup finely chopped onion 1/₃ cup finely chopped green pepper 1/4 tsp. salt 1/4 tsp. pepper ³/4 lb. lean ground turkey 1 can (15 oz.) black beans, rinsed and drained 1 can (10 oz.) diced tomatoes and green chilies, undrained 2 Tbsp. chopped fresh cilantro 2 cups hot cooked brown rice
1. In a large bowl, combine first five ingredients. Add turkey; mix lightly. Shape into four ¹ ₂-in.-thick oval patties.
2. In a small saucepan, heat beans and tomatoes over medium heat, 8-10 minutes, stirring occasionally. Remove from heat; stir in cilantro. Keep warm.
3. Grill patties, covered, over medium heat or broil 4-5 in. from heat until a thermometer reads 165°, 4-5 minutes per side. Serve with rice and beans.
FREEZE OPTION Place patties on a baking sheet; freeze until firm. Remove from the pan and transfer to an airtight freezer container; return to freezer. To use, grill or broil frozen patties as directed, increasing time as necessary for a thermometer to read 165°.
