Cherry Tomato and Feta Sauté

Simple Grace - - Sunday Supper -

1 lb. red and yel­low cherry


2 Tbs. minced shal­lots 1 clove gar­lic, minced

1 Tbs. olive oil

1⁄4 cup crum­bled feta cheese 2 Tbs. minced fresh mint 1 In medium skil­let over medium-high heat, cook cherry toma­toes, minced shal­lots and minced gar­lic in olive oil 5 min. or un­til skins just be­gin to burst, stir­ring oc­ca­sion­ally. Re­move skil­let from heat and trans­fer toma­toes to bowl. 2 Sprin­kle crum­bled feta cheese and minced fresh mint over tomato mix­ture; toss well to coat. Sea­son to taste with salt and pep­per.
