Cherry Tomato and Feta Sauté

1 lb. red and yellow cherry
2 Tbs. minced shallots 1 clove garlic, minced
1 Tbs. olive oil
1⁄4 cup crumbled feta cheese 2 Tbs. minced fresh mint 1 In medium skillet over medium-high heat, cook cherry tomatoes, minced shallots and minced garlic in olive oil 5 min. or until skins just begin to burst, stirring occasionally. Remove skillet from heat and transfer tomatoes to bowl. 2 Sprinkle crumbled feta cheese and minced fresh mint over tomato mixture; toss well to coat. Season to taste with salt and pepper.
