Salty ’n’ Buttery Sweet Potatoes
ACTIVE TIME: 15 min. TOTAL TIME: 1 hr. SERVES: 6
1⁄4 cup melted butter
2 Tbs. minced fresh chives 1 clove garlic, minced
6 small sweet potatoes 1 Heat grill to medium-high (or heat oven to 425°F). In bowl, combine first 3 ingredients; season with salt and pepper. Reserve 1 Tbs. mixture. 2 Place 1 potato on wooden spoon. Using knife, cut crosswise into thin slices, cutting most of the way through. Repeat with remaining potatoes. Place each potato on sheet of foil and brush tops with butter mixture. Wrap in foil, leaving tops open. Place on grill and cook 40 min. (or bake 1 hr.) until tender.
