Chilled Al­mond– Green Bean Salad

Simple Grace - - Sunday Supper -

3 Tbs. olive oil

2 Tbs. white wine vine­gar 2 tsp. Di­jon mus­tard 1 clove gar­lic, minced

1 tsp. tomato paste

1 pint cherry toma­toes,

quar­tered

1⁄4 cup minced red onions 1 lb. green beans, trimmed

and blanched

1⁄4 cup sliv­ered al­monds 2 Tbs. sliced scal­lions 1 In bowl, com­bine first 4 in­gre­di­ents; sea­son with salt and pep­per. Add toma­toes and onions; toss to coat. 2 Add green beans to tomato mix­ture; toss well. Sea­son with salt and pep­per. Sprin­kle with al­monds and scal­lions.
