IT’S NO TOIL OR TROU­BLE TO GATHER ALL YOUR SPOOKY SIS­TERS FOR A SCARY NIGHT IN.

In a saucepan, bring 1 cup sugar and 1 cup water to a boil. Cook and stir un­til sugar is dis­solved; set aside to cool. Place 8 medium ki­wifruit, peeled and quar­tered, 1/2 cup fresh mint leaves and sugar syrup in a blender; cover and process un­til blended. Pour into a large pitcher; stir in 1 cup vodka if de­sired. Re­frig­er­ate un­til chilled. Just be­fore serv­ing, stir in 1 liter gin­ger ale, chilled. Serve over ice. 1 cup: 253 cal., 1g fat (0 sat. fat), 0 chol., 17mg sod., 64g carb.
