SWEET POTATO CASSEROLE

Ingredient­s:

4 cups sweet potatoes

1 egg, beaten

1/4 cup white sugar

1/4 tsp salt

1/2 tsp. vanilla extract

1 1/2 tsp butter

1/3 cup all-purpose flour

1/2 cup brown sugar, packed lightly

3 Tbsp. butter, melted

1 cup chopped pecans miniature marshmallo­ws, optional

Directions: Preheat oven to 350°F. In a mixing bowl, combine the mashed potatoes, white sugar, salt, vanilla, egg, and 1 1/2 tsp. butter. Mix well and pour into a buttered 3 quart baking dish. Combine flour, brown sugar, melted butter and pecans. Top potatoes with pecan mixture. Bake for 35-45 minutes. Remove casserole from oven during last five minutes, top with marshmallo­w if desired, and allow to melt and brown.
