The Tivoli Brew­ing Co. is now serv­ing beer brewed in its his­toric home on the Au­raria cam­pus and soon will serve its drinks out­doors in a new beer gar­den sched­uled to open this year.

The Tivoli Brew­ing Co. is now serv­ing beer brewed in its his­toric home on the Au­raria cam­pus and soon will serve its drinks out­doors in a new beer gar­den sched­uled to open this year.

The brew­ing com­pany res­ur­rected the Tivoli brand when it opened a brew pub in Au­gust, ren­o­vat­ing an old restau­rant in the Tivoli build­ing, which serves as the stu­dent union for the three schools that share the cam­pus.

Tivoli beer was brewed off site at Prost Brew­ing Co. un­til the fa­cil­ity was ready. The first beer brewed on cam­pus was poured last week.

Tivoli Brew­ing Co. founder and CEO Corey Mar­shall said it’s been a long time com­ing to bring the brew­ery back to the his­toric build­ing that pre­dates Colorado’s state­hood.

“There’s no place like it,” Mar­shall said.

Di­eter Fo­er­st­ner, vice pres­i­dent of brew­ing op­er­a­tions, added that the his­tory of the build­ing makes it a unique place to brew.

“Some­times I look at the walls and think of all the old brew­ers and the his­tory,” he said. “It’s re­ally some­thing spe­cial.”

The brew­ery also serves as an ed­u­ca­tional piece for Metropoli­tan State Univer­sity of Den­ver, which now of­fers de­grees in brew­ery op­er­a­tions and brew­pub op­er­a­tions.

“We’re not deal­ing with hy­po­thet­i­cals — we’re rolling with the punches,” Fo­er­st­ner said.

The beer gar­den is ex­pected to be done by sum­mer and will al­low Tivoli Brew­ing Co. an op­por­tu­nity to sched­ule out­door events. Con­struc­tion is un­der­way.

Mar­shall said busi­ness at the pub has been strong, with a good por­tion of the clien­tele com­ing from the stu­dent pop­u­la­tion and the fac­ulty at the cam­pus. But he added that word has been spread­ing, and he’s now see­ing peo­ple come in be­fore cam­pus sport­ing events or ac­tiv­i­ties at the Pepsi Cen­ter or Sports Au­thor­ity Field at Mile High.

“There’s lots of new peo­ple and a good rush around happy hour,” Mar­shall said. “We’re start­ing to plan the sum­mer for events and bring in en­ter­tain­ment.”
