1/4 cup soy sauce 1/4 cup good bal­samic vine­gar 1 ta­ble­spoon finely grated le­mon zest 1 ta­ble­spoon finely minced fresh gar­lic In a glass or ce­ramic bowl, blend in­gre­di­ents to­gether and add the chops, ke­babs or rack of lamb to be mar­i­nated. Place in the re­frig­er­a­tor for 4 to 8 hours. Bring meat to room tem­per­a­ture be­fore grilling. Salt and pep­per.
