CANDIED CITRUS PEEL.
Think you can’t repurpose your food? Well, you can and here is my recipe for Candied Citrus Peel. This is so easy and delicious. You can dip it in melted chocolate, add to party mix or add it to ice cream and cookies.
-2 large oranges or lemons
-3 tangerines or grapefruit
-1 1/3 cup sugar, plus extra for dusting
-1/3 cup water
Slice the rinds into strips and remove the white pith. Add water and sugar in a covered saucepan and bring to boil over medium heat stirring often. Add the citrus peels and continue to boil stirring til sugar is dissolved. Reduce heat and cook uncovered till the peel is almost translucent (12-15 minutes). Drain on wire rack till they are cool enough to handle but still warm. Toss them with a little sugar and allow them to dry on wire rack 1-2 hours.
