BULGUR is a type of whole-wheat grain that’s steamed, dried, and crushed. It can often be found in Middle Eastern recipes, such as pilafs and salads, like the tabbouleh on page 44. Not to be confused with cracked wheat, bulgur is quick cooking due to the steaming it undergoes during processing.
