BLACK BEANS, also known as tur­tle beans, con­tain 7 grams of pro­tein per half cup. Plus, they’re high in fiber and iron, mak­ing them a great pro­tein source for any diet.

BUL­GUR is a type of whole-wheat grain that’s steamed, dried, and crushed. It can of­ten be found in Mid­dle Eastern recipes, such as pi­lafs and sal­ads, like the tab­bouleh on page 44. Not to be con­fused with cracked wheat, bul­gur is quick cook­ing due to the steam­ing it un­der­goes dur­ing pro­cess­ing.
