MACARONI AND CHEESE is def­i­nitely in line for a place in the com­fort food hall of fame. And these French-style gnoc­chi make the light­est, fluffi­est puffs of macaroni and cheese you have ever tasted. Tech­ni­cally, gnoc­chi Parisi­enne is French-style gnoc­chi made and poached as on page 41, then baked with Parmesan and herbs, but up­grad­ing it with a creamy cheese sauce is an even bet­ter idea. If you’re pressed for time but still crave com­fort, skip the sauce. In­stead, sauté them (see page 39) in but­ter or olive oil, then toss with Parmesan while still warm.
