CROS­TINI IS THE ITAL­IAN WORD FOR “LIT­TLE TOASTS.” In their most ba­sic form, cros­tini are pieces of bread, about 1/2-inch thick, cut from long, nar­row loaves, like baguettes. They make per­fect rafts for turn­ing into canapés. For the best cros­tini, the bread needs to have a firm tex­ture and chewy crust, and the slices need to be thin so you won’t have prob­lems bit­ing into a piled high canapé. Brush the baguette slices with olive oil, then toast them. Toast­ing the bread gives it the strength it needs to hold the dip, top­ping, and gar­nish. And rub­bing a lit­tle gar­lic on the cros­tini adds a nice fla­vor punch.
