I love the look of smooth ic­ing on cakes, but it can be a chal­lenge to ap­ply frost­ing in an even layer. To make it easy on my­self, I use a bench knife to ap­ply the frost­ing in one smooth mo­tion and re­peat as needed. It works great to frost the sides of a two-layer cake, since it's about as tall as the width of the bench knife. Jackie Car­son, New­ton, IA
