with mar­i­nated mozzarella

Mar­i­nated mozzarella is a hand-braided spe­cialty cheese made with gar­lic and red pep­per flakes. Look for the Cap­piello brand near other cheeses.

MakesTo­tal time:6 serv­ings30 min­utes 1 SAUTÉ: cup each finely diced onions and red bell peppers 1/4 cup minced fresh gar­lic 1/2 tsp. red pep­per flakes 3 Tbsp. olive oil ADD: 1 can crushed to­ma­toes (28 oz.) 1 can diced to­ma­toes in juice (28 oz.), drained Salt and black pep­per to taste CRACK: 6 eggs TOP: 4 oz. mar­i­nated mozzarella, sliced

Sauté onions, bell peppers, gar­lic, and pep­per flakes in oil in a large sauté pan over medium-high heat un­til soft, 5 min­utes.

Add crushed and diced to­ma­toes, bring to a boil, re­duce heat to low, and sim­mer 10 min­utes; sea­son with salt and black pep­per. Pre­heat broiler to high with rack 6–8 inches from el­e­ment.

Crack eggs on top of sauce, cover, and poach un­til whites are set but yolks are still soft, about 5 min­utes. Trans­fer pan to a bak­ing sheet.
