Eggs in Purgatory
with marinated mozzarella
Marinated mozzarella is a hand-braided specialty cheese made with garlic and red pepper flakes. Look for the Cappiello brand near other cheeses.

Sauté onions, bell peppers, garlic, and pepper flakes in oil in a large sauté pan over medium-high heat until soft, 5 minutes.
Add crushed and diced tomatoes, bring to a boil, reduce heat to low, and simmer 10 minutes; season with salt and black pepper. Preheat broiler to high with rack 6–8 inches from element.
Crack eggs on top of sauce, cover, and poach until whites are set but yolks are still soft, about 5 minutes. Transfer pan to a baking sheet.
Top eggs and sauce with mozzarella and broil until cheese is golden, 3 minutes. Divide eggs and sauce among 6 dishes and serve immediately. Per serving: 285 cal; 15g total fat (5g sat); 228mg chol; 623mg sodium; 22g carb; 4g fiber; 14g protein
