ES­CA­ROLE is a mem­ber of the en­dive fam­ily and has a hearty tex­ture with a mildly bit­ter taste. With broad green leaves, it looks a bit like leaf let­tuce, but is stur­dier. Es­ca­role can be eaten fresh, al­though cook­ing seems to tame its bit­ter­ness. If you can’t find es­ca­role, sub­sti­tute spinach or Swiss chard.
