Makes 2 cups To­tal time: 10 min­utes 2 cups Roma to­ma­toes, seeded and chopped 3 Tbsp. ex­tra-vir­gin olive oil 2 Tbsp. minced shal­lots 2 Tbsp. red wine vine­gar 1/2 cup chopped fresh basil Salt and black pep­per to taste

Com­bine to­ma­toes, oil, shal­lots, and vine­gar; let sit at least 30 min­utes. Stir in basil; sea­son with salt and pep­per.
