FOR SOME­THING A LIT­TLE DIF­FER­ENT, here’s what you do. Don’t as­sem­ble the cros­tini ahead. Just set out the lit­tle toasts and all of the dips, top­pings, and garnishes in in­di­vid­ual serv­ing bowls. Then let your guests build their own canapés us­ing what they like. Start with the dip. Spread a layer of Arugula, White Bean, or Sun-Dried Tomato Dip onto cros­tini.

Add a top­ping. Add Mar­i­nated To­ma­toes, White Bean Salad, Mush­room Sauté, or Sautéed Red Peppers. Fin­ish with a gar­nish. Top cros­tini with toasted pine nuts, shaved Parmesan, crum­bled Gor­gonzola, or chopped pars­ley.
