Mush­room Sauté

Makes 11/2 cups To­tal time: 20 min­utes 1/4 cup ex­tra-vir­gin olive oil 2 cups sliced crem­ini mushrooms, trimmed 2 cups shi­itake mushrooms (stems re­moved), sliced 1 Tbsp. minced fresh gar­lic 3 Tbsp. minced fresh thyme Salt and black pep­per to taste

Heat oil in a large skil­let over medi­umhigh un­til shim­mer­ing. Cook mushrooms un­til browned, 4–5 min­utes.

Add gar­lic; cook 1 minute. Off heat, stir in thyme and sea­son mushrooms with salt and pep­per.
