Makes 11/2 cups Total time: 20 minutes 1/4 cup extra-virgin olive oil 2 cups sliced cremini mushrooms, trimmed 2 cups shiitake mushrooms (stems removed), sliced 1 Tbsp. minced fresh garlic 3 Tbsp. minced fresh thyme Salt and black pepper to taste
Heat oil in a large skillet over mediumhigh until shimmering. Cook mushrooms until browned, 4–5 minutes.
Add garlic; cook 1 minute. Off heat, stir in thyme and season mushrooms with salt and pepper.
