White Bean Salad
Makes 2 cups Total time: 10 minutes 1 can cannellini beans (15 oz.), drained and rinsed 1/4 cup diced red bell pepper 2 Tbsp. extra-virgin olive oil 1 Tbsp. minced shallots 1 Tbsp. fresh lemon juice 2 Tbsp. chopped fresh flat-leaf parsley 1 Tbsp. chopped fresh oregano Salt and black pepper to taste
Combine beans, bell pepper, oil, shallots, and lemon juice; let sit at least 30 minutes. Stir in parsley and oregano; season with salt and black pepper.
