White Bean Salad

Makes 2 cups To­tal time: 10 min­utes 1 can can­nellini beans (15 oz.), drained and rinsed 1/4 cup diced red bell pep­per 2 Tbsp. ex­tra-vir­gin olive oil 1 Tbsp. minced shal­lots 1 Tbsp. fresh lemon juice 2 Tbsp. chopped fresh flat-leaf pars­ley 1 Tbsp. chopped fresh oregano Salt and black pep­per to taste

Com­bine beans, bell pep­per, oil, shal­lots, and lemon juice; let sit at least 30 min­utes. Stir in pars­ley and oregano; sea­son with salt and black pep­per.
