Sautéed Red Peppers

Makes 2 cups To­tal time: about 1 hour 3 red bell peppers, cut into strips (about 4 cups) 1/3 cup bal­samic vine­gar + 2 Tbsp. 1/4 cup ex­tra-vir­gin olive oil Salt to taste

Sim­mer bell peppers in 1/3 cup bal­samic and oil in a sauté pan over medium-low heat, stir­ring oc­ca­sion­ally, un­til peppers soften, 45 min­utes.

Add 2 Tbsp. vine­gar, if needed, and cook peppers un­til glazed, 15 min­utes more; sea­son with salt.
