Sautéed Red Peppers
Makes 2 cups Total time: about 1 hour 3 red bell peppers, cut into strips (about 4 cups) 1/3 cup balsamic vinegar + 2 Tbsp. 1/4 cup extra-virgin olive oil Salt to taste
Simmer bell peppers in 1/3 cup balsamic and oil in a sauté pan over medium-low heat, stirring occasionally, until peppers soften, 45 minutes.
Add 2 Tbsp. vinegar, if needed, and cook peppers until glazed, 15 minutes more; season with salt.
