Mixed Green Salad
with mango & cashews
Toasted nuts make a huge impact on flavor because heat releases the nuts’ flavorful oils.
Makes 4 servings (4 cups) Total time: 15 minutes WHISK: 2 Tbsp. fresh lime juice 1 Tbsp. canola or vegetable oil 2 tsp. minced shallots 2 tsp. honey Salt and cayenne pepper to taste ADD: 4 cups mixed salad greens 1 cup chopped mango 2 Tbsp. chopped cashews, toasted
Whisk together lime juice, oil, shallots, and honey in a large bowl for the vinaigrette; season with salt and cayenne.
Add greens and mango; toss to coat, then top with cashews.
