Toasted nuts make a huge im­pact on fla­vor be­cause heat re­leases the nuts’ fla­vor­ful oils.

Makes 4 serv­ings (4 cups) To­tal time: 15 min­utes WHISK: 2 Tbsp. fresh lime juice 1 Tbsp. canola or veg­etable oil 2 tsp. minced shal­lots 2 tsp. honey Salt and cayenne pep­per to taste ADD: 4 cups mixed salad greens 1 cup chopped mango 2 Tbsp. chopped cashews, toasted

Whisk to­gether lime juice, oil, shal­lots, and honey in a large bowl for the vi­nai­grette; sea­son with salt and cayenne.

Add greens and mango; toss to coat, then top with cashews.
