Thai Cucumber Salad
Snow peas are entirely edible — pod and all. Antioxidant vitamins provided by green peas include vitamins C and E, as well as a good amount of the mineral zinc.
Makes 4 servings (2 cups) Total time: 15 minutes
1/4 cup distilled white vinegar 2 Tbsp. sugar
2 cups peeled, seeded, and sliced cucumbers 1/4 cup snow peas, trimmed and thinly sliced 1/4 cup thinly sliced red onion 1 Tbsp. seeded and minced jalapeño 1 Tbsp. chopped fresh mint Salt and red pepper flakes to taste
Whisk together vinegar and sugar in a large bowl until sugar dissolves.
Add cucumbers, snow peas, onion, jalapeño, and mint, season with salt and pepper flakes, and toss to coat. Chill salad until ready to serve.
