Thai Cu­cum­ber Salad

Snow peas are en­tirely ed­i­ble — pod and all. An­tiox­i­dant vi­ta­mins pro­vided by green peas in­clude vi­ta­mins C and E, as well as a good amount of the min­eral zinc.

Makes 4 serv­ings (2 cups) To­tal time: 15 min­utes


1/4 cup dis­tilled white vine­gar 2 Tbsp. sugar


2 cups peeled, seeded, and sliced cu­cum­bers 1/4 cup snow peas, trimmed and thinly sliced 1/4 cup thinly sliced red onion 1 Tbsp. seeded and minced jalapeño 1 Tbsp. chopped fresh mint Salt and red pep­per flakes to taste

Whisk to­gether vine­gar and sugar in a large bowl un­til sugar dis­solves.

Add cu­cum­bers, snow peas, onion, jalapeño, and mint, sea­son with salt and pep­per flakes, and toss to coat. Chill salad un­til ready to serve.
