Sautéed Greens & To­ma­toes

Col­lard greens taste like a cross be­tween cab­bage and kale, and make a hearty top­per or side dish for the veggie burgers.

Makes 4 serv­ings To­tal time: 30 min­utes

1 cup sliced onions 1/2 tsp. red pep­per flakes 4 tsp. olive oil 6 cups thinly sliced col­lard greens (6 oz.) 1 cup low-sodium veg­etable broth 1 cup halved grape to­ma­toes 2 Tbsp. cider vine­gar Salt to taste

Sauté onions and pep­per flakes in oil in a sauté pan over medium-high heat un­til onions soften, 3 min­utes.

Toss in greens un­til start­ing to wilt. Add broth and sim­mer greens un­til ten­der, 8–10 min­utes. Stir in to­ma­toes and vine­gar, then sea­son with salt.
