Sautéed Greens & Tomatoes
Collard greens taste like a cross between cabbage and kale, and make a hearty topper or side dish for the veggie burgers.
Makes 4 servings Total time: 30 minutes
1 cup sliced onions 1/2 tsp. red pepper flakes 4 tsp. olive oil 6 cups thinly sliced collard greens (6 oz.) 1 cup low-sodium vegetable broth 1 cup halved grape tomatoes 2 Tbsp. cider vinegar Salt to taste
Sauté onions and pepper flakes in oil in a sauté pan over medium-high heat until onions soften, 3 minutes.
Toss in greens until starting to wilt. Add broth and simmer greens until tender, 8–10 minutes. Stir in tomatoes and vinegar, then season with salt.
