Garden Tortilla Wraps with feta spread
Cucumbers and radishes add crunch and color to these wraps. To make the tortillas pliable, microwave them for a few seconds. Makes 4 servings Total time: 20 minutes + chilling 6 oz. feta cheese, crumbled 4 oz. cream cheese, softened 1 /3 cup sour cream Minced zest of 1 lemon Salt and black pepper to taste 3 Tbsp. minced fresh dill 2 Tbsp. minced fresh mint 4 spinach or sun-dried tomato flour tortillas (10-inch), warmed 1 cup diced English cucumbers 1 cup diced radishes 1/2 cup thinly sliced red onion
Purée feta, cream cheese, sour cream, and zest in a food processor for the feta spread; season with salt and pepper. Transfer feta spread to a bowl and stir in dill and mint.
Spread one fourth of the feta spread evenly over each tortilla. Divide cucumbers, radishes, and red onion among tortillas.
