RECIPE OF THE MONTH LIGHTHOUSE SANDWICH
One of the best things about Disney food is that no matter what type of eater you are, you’ll be able to find something that fits your preferences. Whether you are vegetarian, vegan, gluten free, dairy free, etc., Disney has got you covered. As someone who eats a primarily vegetarian diet, I’m always on the lookout for a vegetarian meal that is both healthy and satisfying.
One of my favorite places to have lunch at Walt Disney World is at Columbia Harbour House. With a wide variety of selections, the menu is able to please both my vegetarian palate and that of the carnivores in my family.
Vegetarians will especially love their Lighthouse Sandwich. Multigrain bread is slathered with garlicky hummus, topped with a crisp tomato, and a simply dressed broccoli slaw. It is served with a side of chips, but you can upgrade that to a side of fries for a small fee. The sandwich is tasty. The honey mustard-flavored broccoli slaw adds a nice crunch to balance out the smooth and creamy hummus. I don’t have to feel too guilty about eating the Lighthouse Sandwich. It’s a healthy alternative to the somewhat unhealthy choices that you can find throughout the park. Pair it with Columbia Harbor House’s famous Lemon Slush and you have a light and refreshing lunch — perfect for a hot Florida day!
It is easy to recreate the Lighthouse Sandwich at home. With only five simple ingredients, you’ll be able to whip one up in no time - or make it more challenging with homemade hummus. The beauty of making this sandwich at home is that you can switch up the ingredients to add an extra layer of flavor - like using olive or spinach and artichoke hummus. This sandwich would also be delicious topped with sprouts, for an added crunch.
Multigrain Bread Hummus (homemade or store bought) Broccoli Slaw Ken’s Honey Mustard Dressing Tomatoes
- In a small bowl, mix about a ½ cup of broccoli slaw with the honey mustard dressing. - The amount of dressing depends on how flavorful you want it. I used about ¼ cup.
Set aside. - Spread a generous layer of hummus on two slices of multigrain bread. - Top one slice with broccoli slaw. - Top the other slice with two slices of tomato. - Put the sandwich together. Serve with a side of chips or fries.
Columbia Harbour House is a Counter-service restaurant located in Liberty Square at the Magic Kingdom. It is open for both lunch and dinner. Some Disney Dining Plans (DDPS) are accepted.
