Cred­ited with pop­u­lar­iz­ing Span­ish cui­sine in the United States, culi­nary master José An­drés is a cre­ative tour de force in Las Ve­gas and through­out the world. He has been named to Time mag­a­zine’s 100 Most In­flu­en­tial list and awarded the James Beard Foun­da­tion’s top prize of Out­stand­ing Chef. He first came to Las Ve­gas in 2010 with his con­cepts China Poblano, Jaleo and è by José An­drés, in in­ti­mate space inside Jaleo at the Cos­mopoli­tan; his pièce de ré­sis­tance, Bazaar Meat, opened this year at SLS Las Ve­gas. tures and ter­ri­to­ries. Ku Noo­dle (at SLS Las Ve­gas) was in­spired by my many trips to Asia. From the amaz­ing street food cul­ture of Sin­ga­pore and the art of hand cut noo­dles in China, to the amaz­ing ra­men and soba noo­dles of Ja­pan, I wanted a way to cap­ture that and make it my own. Ve­gas is a des­ti­na­tion where peo­ple go to ex­pe­ri­ence some­thing to­tally dif­fer­ent, and be­cause it’s be­come such an im­por­tant food town, that means we have to work harder to re­ally wow our guests. I love that! Land­ing in Ve­gas for the first time is an as­ton­ish­ing ex­pe­ri­ence. It’s beau­ti­ful to see pure desert on one side and on the other end big bright lights that il­lu­mi­nate the sky. It’s an homage to so­ci­ety to see Las Ve­gas as a des­ti­na­tion and also a home to many peo­ple. We first opened in Las Ve­gas in 2010, right when peo­ple started to rec­og­nize it as a big food des­ti­na­tion, but a lot of that ac­tiv­ity and de­vel­op­ment was fo­cused I think Bazaar Meat is a meat con­cept un­like any other! It’s about tap­ping into our car­niv­o­rous side and en­joy­ing the best meats pos­si­ble. We pulled in­spi­ra­tion from the greats like Es­coffier and Carême so in a way we are recre­at­ing his­tory. We have whole an­i­mals on dis­play like baby pigs and lambs. The restau­rant is beau­ti­ful and dra­matic. It’s ev­ery­thing you want Ve­gas to be! The kitchen is the cen­tral and most im­por­tant room in the house and it’s my fa­vorite way to con­nect and spend time with my wife and daugh­ters. We love go­ing to the farm­ers’ mar­kets on Sun­days as a fam­ily and choos­ing the most beau­ti­ful in­gre­di­ents.
