If it crawls, eat it. If it explodes, so be it. The concept of “New Wave” sushi was still foreign in the mid ’90s, overshadowed by the burgeoning Hawaii Regional Cuisine. But Sansei Seafood Restaurant & Sushi Bar chef/owner Dave “DK” Kodama had his own plans. His concept to provide innovative sushi in a casual environment proved an instant success among diners and critics. While spider and caterpillar rolls have now become as familiar as tempura and nigiri, Kodama still provides guests a contemporary look at sushi and sashimi, offering such specialties as panko-crusted ahi sushi roll and mango crab salad roll.
