If it crawls, eat it. If it ex­plodes, so be it. The con­cept of “New Wave” sushi was still for­eign in the mid ’90s, over­shad­owed by the bur­geon­ing Hawaii Re­gional Cui­sine. But San­sei Seafood Restau­rant & Sushi Bar chef/owner Dave “DK” Kodama had his own plans. His con­cept to pro­vide in­no­va­tive sushi in a ca­sual en­vi­ron­ment proved an in­stant suc­cess among din­ers and crit­ics. While spi­der and cater­pil­lar rolls have now be­come as familiar as tem­pura and ni­giri, Kodama still pro­vides guests a con­tem­po­rary look at sushi and sashimi, of­fer­ing such spe­cial­ties as panko-crusted ahi sushi roll and mango crab salad roll.
