MORN­ING

While wak­ing up at 3 in the morn­ing may not seem like part of an ideal day, it is if I am plan­ning to see the sun­rise at the sum­mit of Haleakala. The stunning hues are the re­ward, as are the sil­hou­ettes of the Hawai‘i Is­land vol­ca­noes of Mauna Kea, Mauna Loa and Hualalai, as well as the is­lands of Lanai and Ka­hoolawe. Be sure to bring a jacket.

AF­TER­NOON

The drive to Maui’s Win­ery at

Ulu­palakua is wind­ing and scenic. Lo­cated 1,800 feet above sea level on the slopes of Haleakala, the vol­canic soils pro­vide a rich en­vi­ron­ment for grapes to flour­ish, in­clud­ing va­ri­eties like Syrah, Chenin Blanc and Chardon­nay. Daily tours are of­fered at 10:30 a.m. and 1:30 p.m., each end­ing in the tast­ing room.

EVENING

Dining op­tions abound on Maui. But one of my fa­vorite places has to be Mi­GRANT at the Wailea Beach Mar­riott. For­mer “Top Chef” con­tes­tant Shel­don Simeon has been mak­ing a culi­nary state­ment, bring­ing his Filipino her­itage into play. One of my fa­vorite dishes is the fat chow funn, tossed with bits of roast pork, and pipinola shoots.
