Mixol­o­gists in­fuse craft cock­tails with fresh herbs, spices and fruits.

A resur­gence of classic and pre-pro­hi­bi­tion cock­tails is now trend­ing in the bev­er­age in­dus­try. The Moscow Mule is mak­ing a kick-ass come­back while in­ter­est in the Man­hat­tan and the Cos­mopoli­tan has spiked, thanks to “Sex in the City” and “Mad Men.” In Hawai‘i, mixol­o­gists are stock­ing their bars with el­e­ments that were once re­served for kitchens. Herbs, spices, syrups and re­duc­tions are now just as com­mon as bour­bons, gins and vod­kas. And when shaken, stirred and mud­dled, these ingredients make for ir­re­sistible elixirs.
