A sta­ple in the Hawai­ian diet, taro is a root veg­etable of­ten seen in large open pad­dies with sturdy stems stand­ing 2- to 3-feet tall that sup­port large, heart-shaped leaves. In the hands of chefs, the starchy tu­ber is el­e­vated to a gourmet level dur­ing the 25th An­nual East Maui Taro Fes­ti­val, sched­uled for April 29. At­ten­dees can sam­ple taro-in­spired dishes from at least 20 dif­fer­ent food ven­dors, as well as try their hands at poi pound­ing.
