Ijji on Divisidero Street. But in-the-know sushi purists will have made a reser­va­tion for one of the two nightly seat­ings to ex­pe­ri­ence the res­tau­rant’s 19- course omakase menu. They’ll open the un­marked door to dis­cover a tiny, hushed space with dim light­ing that’s pris­tine yet cozy. Be­hind the 7-seat cy­press sushi bar, chefs pre­pare the fish, flown in from Tokyo, with laser-like pre­ci­sion. They em­ploy cus­tom­ary Ja­panese meth­ods us­ing the best short grain rice koshi­jikari, pre­mium grade akazu red vine­gar and their own blend of aged soy in­fused with kelp for the ni­giri, which is served on dish­ware im­ported from Ja­pan. $135. 252 Divisadero St., 415.658.7388, ijj­ $$$$
