Pepperoni-pizza Noodle Bake
Preheat broiler. Coat shallow 2-qt. baking dish with cooking spray. In large nonstick skillet, heat 1 Tbs. oil over medium-high heat. Add pepper, onion and pepperoni; cook, stirring occasionally, until softened, about 10 minutes. Stir in tomatoes; bring to boil. Reduce heat to medium-low; cover and cook, stirring occasionally, until flavors blend, about 10 minutes. Reserve 2 cups sauce mixture. In large pot of unsalted boiling water, cook noodles until just tender, 1 minute (do not overcook); drain. Add to sauce in skillet; toss to coat. Transfer to baking dish.
