Pepperoni-pizza Noodle Bake

Preheat broiler. Coat shallow 2-qt. baking dish with cooking spray. In large nonstick skillet, heat 1 Tbs. oil over medium-high heat. Add pepper, onion and pepperoni; cook, stirring occasional­ly, until softened, about 10 minutes. Stir in tomatoes; bring to boil. Reduce heat to medium-low; cover and cook, stirring occasional­ly, until flavors blend, about 10 minutes. Reserve 2 cups sauce mixture. In large pot of unsalted boiling water, cook noodles until just tender, 1 minute (do not overcook); drain. Add to sauce in skillet; toss to coat. Transfer to baking dish. Top with reserved sauce, then sprinkle with cheese. Broil until browned, 4-5 minutes. Servings: 6. Cals.: 381. Protein: 13 g. Fat: 20 g. (9 g. saturated). Chol.: 29 mg. Carbs.: 35 g. Sodium: 748 mg.
