Co­coa Peb­bles Ice-cream Sand­wiches

1/4 cup un­salted but­ter 3 cups mini marsh­mal­lows 3 cups Co­coa Peb­bles ce­real 1 pt. ice cream

● Grease stan­dard-size muf­fin pan with small amount of but­ter; set aside. In large pot, melt but­ter over medium-high heat. Add marsh­mal­lows, stir­ring un­til com­pletely melted. Re­move from heat; fold in Co­coa Peb­bles. Press 2 heap­ing ta­ble­spoon­fuls of Co­coa Peb­bles mix­ture into each muf­fin cup. Cool com­pletely ; re­move. To as­sem­ble sand­wiches, put a large scoop of slightly soft­ened ice cream be­tween two ce­real treats and press to­gether lightly. Once all sand­wiches are as­sem­bled, place in freezer for at least 30 min­utes to firm up. Serve im­me­di­ately or wrap in­di­vid­u­ally with plas­tic wrap and keep in freezer in an air­tight con­tainer un­til ready to serve. Makes 6 serv­ings.
