Cocoa Pebbles Ice-cream Sandwiches
1/4 cup unsalted butter 3 cups mini marshmallows 3 cups Cocoa Pebbles cereal 1 pt. ice cream
● Grease standard-size muffin pan with small amount of butter; set aside. In large pot, melt butter over medium-high heat. Add marshmallows, stirring until completely melted. Remove from heat; fold in Cocoa Pebbles. Press 2 heaping tablespoonfuls of Cocoa Pebbles mixture into each muffin cup. Cool completely ; remove. To assemble sandwiches, put a large scoop of slightly softened ice cream between two cereal treats and press together lightly. Once all sandwiches are assembled, place in freezer for at least 30 minutes to firm up. Serve immediately or wrap individually with plastic wrap and keep in freezer in an airtight container until ready to serve. Makes 6 servings.
