Baked Donuts with Cream Cheese Frosting
DONUTS 1 3/4 cups all-purpose flour 3/4 cup sugar 1 1/2 tsp. baking powder 1/4 tsp. baking soda 1/4 tsp. salt 1/2 cup buttermilk 1 1/2 Tbs. unsweetened cocoa powder 2 tsp. red liquid food coloring
1 tsp. white vinegar 1 egg 2 Tbs. unsalted butter, at room temperature 1 Tbs. oil 1 tsp. vanilla extract CREAM CHEESE FROSTING 2 oz. cream cheese, at room temperature
1 Tbs. unsalted butter, at room temperature 1/4 tsp. vanilla extract Pinch of salt 3/4 cup confectioners’ sugar 1 oz. white chocolate, melted, slightly cooled
Donuts: Set oven rack in center position; preheat oven to 350°F. Coat 2 (6 cavity) donut pans with cooking spray. Whisk flour, sugar, baking powder, baking soda and salt in bowl to combine. Stir buttermilk, cocoa, food coloring and vinegar together in measuring cup (make sure there are no lumps of cocoa). Whisk buttermilk mixture and egg, butter, oil and vanilla into flour mixture until combined. Fill cavities in donut pan about 1/2 full with batter. Bake until donuts spring back when touched, 7-10 minutes. Remove from pan; cool on rack.
Frosting: Beat cream cheese, butter, vanilla and salt in large bowl with mixer until smooth. Gradually beat in confectioners’ sugar. Add white chocolate; beat until blended. Spread frosting over tops of donuts. Makes 12 donuts.
