The dif­fer­ence: South add Amer­i­cans tons of gar­lic to their chicken broth, along with hot spices— in­stead and of noo­dles, they use bread! ✤ Add 2 Tbs. olive oil to a stock­pot. and add Turn heat to medium-high 1/4 lb. stale bread, cubed. un­til bread Cook 5 min­utes, stir­ring is lightly browned. Add of­ten, 4 gar­lic cloves, chopped; 1/2 tsp. cayenne pep­per or hot smoked pa­prika salt. Stir well; cook 3 and a pinch of min­utes, then add 4 cups chicken broth. Bring to a boil; re­duce heat and sim­mer 15 min­utes.
