It’s pretty hard to mess up a milkshake, but a few tips will ensure a deliciously thick, creamy consistency every time. First, “temper” your ice cream by letting it slowly soften at room temperature for 10-15 minutes. If the ice cream is too soft, the shake won’t hold together; if it’s too hard, you’ll need too much milk to thin it out. When you’re ready to blend, combine about
2 cups ice cream with 1/4 cup milk for each serving. Blitz on high for 30 seconds, then add one or two mix-ins, such as crushed cookies, candy bar pieces, nuts, frozen fruit or chocolate sauce and blend 10 seconds more. That’s just enough time to break down the pieces but not so long that they disappear!
