It’s pretty hard to mess up a milk­shake, but a few tips will en­sure a de­li­ciously thick, creamy con­sis­tency ev­ery time. First, “tem­per” your ice cream by let­ting it slowly soften at room tem­per­a­ture for 10-15 min­utes. If the ice cream is too soft, the shake won’t hold to­gether; if it’s too hard, you’ll need too much milk to thin it out. When you’re ready to blend, com­bine about

2 cups ice cream with 1/4 cup milk for each serv­ing. Blitz on high for 30 sec­onds, then add one or two mix-ins, such as crushed cook­ies, candy bar pieces, nuts, frozen fruit or choco­late sauce and blend 10 sec­onds more. That’s just enough time to break down the pieces but not so long that they dis­ap­pear!
