Pineapple Lemonade Mojito
In small pitcher or cocktail shak
er, combine 1 lemon (quartered), 1/3 cup fresh mint leaves and 1/4 cup Limoncello; using handle end of wooden spoon, muddle mixture. Add 1 cup pineapple juice and 6 Tbs. rum; strain into 2 ice-filled glasses. Pour 1/4 cup chilled seltzer into each glass. If desired, garnish with pineapple and mint. Makes 2 servings.
