Sweet & Spicy Peach & Brie Grilled Cheese

Not your stan­dard grilled cheese! Adding juicy in-sea­son fruit and a driz­zle of fiery chili sauce makes a gourmet-easy twist that will re­ally wow

8 slices soft white bread 5 1/2 Tbs. but­ter, at room tem­per­a­ture 1/2 cup Thai sweet chili sauce, plus more for dip­ping 1/2 red onion, thinly sliced 8 oz. cold Brie cheese, cut into 4 equal pieces 1 juicy ripe peach, pit­ted and thinly sliced Spread 1 side of each bread slice with about 2 tsp. but­ter. Ar­range bread, but­ter-side down, on piece of parch­ment pa­per or bak­ing sheet. Spread 1 Tbs. chili sauce on un­but­tered sides. Layer 4 slices bread with some onion slices, a piece of Brie and a few peach slices. Set other slices of bread, but­ter-side up, over bot­toms. Heat large skil­let or grid­dle over medium-high heat for 2–3 min­utes. Add 2 sand­wiches to skil­let; cook un­til un­der­side is golden and cheese be­gins to melt, press­ing down with spat­ula or sand­wich press, 2–3 min­utes. Flip sand­wiches; cook un­til cheese melts and un­der­side is deep golden brown, 2–3 min­utes. Wipe any burnt bits out of pan with pa­per towel; re­peat with re­main­ing sand­wiches. Makes 4 serv­ings.
