Sweet & Spicy Peach & Brie Grilled Cheese
Not your standard grilled cheese! Adding juicy in-season fruit and a drizzle of fiery chili sauce makes a gourmet-easy twist that will really wow
8 slices soft white bread 5 1/2 Tbs. butter, at room temperature 1/2 cup Thai sweet chili sauce, plus more for dipping 1/2 red onion, thinly sliced 8 oz. cold Brie cheese, cut into 4 equal pieces 1 juicy ripe peach, pitted and thinly sliced Spread 1 side of each bread slice with about 2 tsp. butter. Arrange bread, butter-side down, on piece of parchment paper or baking sheet. Spread 1 Tbs. chili sauce on unbuttered sides. Layer 4 slices bread with some onion slices, a piece of Brie and a few peach slices. Set other slices of bread, butter-side up, over bottoms. Heat large skillet or griddle over medium-high heat for 2–3 minutes. Add 2 sandwiches to skillet; cook until underside is golden and cheese begins to melt, pressing down with spatula or sandwich press, 2–3 minutes. Flip sandwiches; cook until cheese melts and underside is deep golden brown, 2–3 minutes. Wipe any burnt bits out of pan with paper towel; repeat with remaining sandwiches. Makes 4 servings.
