As we kick off the New Year, the canapés kick off the menu, and Chef Martin has pre­pared fresh let­tuce leaf with crispy roast duck and plum sauce, and a tomato and basil br­uschetta. I al­ways like to open a party with a great bot­tle of bub­bles. Both of th­ese canapés will pair nicely with the Ployez-Jac­que­mart ex­tra brut rosé, Ludes, Reims, Cham­pagne, France. Ployez-Jac­que­mart is a fam­ily owned Cham­pagne house cre­ated in 1930 by Mar­cel Ployez and his wife, Yvonne Jac­que­mart. This par­tic­u­lar brut rosé is made from a blend of pinot noir, pinot me­u­nier and a small amount of chardonnay.
